My Viral 5 Ingredient Rice Cake Truffles

Ingredients

12 plain rice cakes

1 ripe banana

5 Medjool dates, stones removed

⅓–½ cup nut butter of choice (peanut butter works perfectly)

50–70 g dark chocolate, melted, for coating (dairy-free if needed)

Directions

Add the rice cakes, banana, dates and nut butter to a food processor. Blend until you get a crumbly mixture that easily holds together when pressed.

Scoop out small portions and roll into bite-sized balls using your hands.

Pop them into the freezer for about 15 minutes — this helps the chocolate set faster later.

Take the balls out, coat each one in melted chocolate and decorate if you like.

Let the chocolate firm up, then enjoy straight away or keep stored in the fridge for up to a week.
