Texas Roadhouse Smothered Chicken

Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 yellow onion (sliced)

1 cup mushrooms (sliced (button or cremini)

2-3 cloves garlic (minced)

Italian dressing (for marinating)

Salt & pepper (to taste)

Garlic powder / onion powder (optional)

Monterey Jack cheese (shredded or sliced)

Directions

Coat chicken breasts in Italian dressing and marinate for at least 30 minutes (or up to a few hours).

Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden brown. Set aside.

In the same skillet, sauté sliced onions and mushrooms until softened and lightly browned. Add garlic near the end and cook for 1-2 minutes.

Return chicken to the pan. Spoon mushroom and onion mixture over each breast.

Top each breast with Monterey Jack cheese. Cover the pan or use low heat/oven until cheese is melted and chicken is fully cooked (165°F/75°C).

Let rest for a few minutes before serving. Enjoy!
