For the Chicken Souvlaki:
1 ½ lbs boneless, skinless chicken breasts, cut into cubes
3 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp dried oregano
½ tsp ground cumin
½ tsp smoked paprika
Salt and black pepper to taste
For the Garlic Sauce:
½ cup Greek yogurt
2 tbsp mayonnaise
1 clove garlic, finely minced
1 tsp lemon juice
1 tsp olive oil
Salt to taste
For the Bowl Assembly:
2 cups cooked basmati or jasmine rice (or couscous)
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ red onion, thinly sliced
½ cup Kalamata olives
½ cup crumbled feta cheese
1 tbsp chopped fresh parsley or dill
Optional: warm pita wedges or lemon wedges for serving
Directions
Marinate the Chicken:
In a bowl, whisk olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
Add chicken cubes and toss to coat evenly.
Cover and refrigerate for at least 30 minutes (up to 8 hours).
Cook the Chicken:
Preheat a grill pan or skillet over medium heat.
Thread chicken onto skewers if desired.
Grill for 10–12 minutes, turning occasionally, until golden and fully cooked.
Prepare the Garlic Sauce:
In a small bowl, mix yogurt, mayonnaise, garlic, lemon juice, olive oil, and salt.
Stir until smooth and creamy. Chill until ready to serve.
Assemble the Bowls:
Divide cooked rice or couscous among serving bowls.
Top each with grilled chicken, tomatoes, cucumber, red onion, olives, and feta.
Drizzle with garlic sauce and sprinkle with parsley or dill.
Serve:
Add lemon wedges or pita on the side for the full Greek street-food experience.
Serve warm or slightly chilled.
Serving Suggestion:
Perfect as a balanced weeknight dinner or meal prep option. Pair with sparkling lemon water or mint iced tea.
