McClellan Jerky Recipe
1/3 cup soy sauce
1 tbsp Worcestershire sauce
1 clove garlic, crushed
1/4 tsp ginger
3 tbsp wine or vinegar
1/2 tsp liquid smoke
Rub salt, pepper (or any seasoned salt such as "Tender Quick") into the meat.
Trim all fat off.
Cut very thin.
Mix ingredients and marinate meat, covered, overnight.
Lay on a rack or shallow pan. DO NOT OVERLAP.
Bake at 125-150 for 6-12 hours until black & hard.
Turn from time to time during drying.
