Chorizo & Halloumi Linguine

Ingredients

400g spaghetti

50g chorizo (diced)

140g Halloumi (diced) I used light.

4 cloves garlic (finely grated)

2tbs tomato purée

120ml single cream - I used elmlea light single

1tbs Italian seasoning- I used @justspices_uk

Salt and pepper to taste

Handful of fresh parsley

Directions

Pop your spaghetti into boiling water with a good amount of salt. Whilst this is cooking fry off your chorizo and halloumi, once it starts to go crispy and brown take half out and put aside. Add in the garlic and tomato puree and cook for a minute or so. Add in the cream and seasoning, cook for a few minutes and then add in the cooked pasta. Mix well and then add a little pasta water until you get the perfect consistency. Add in some fresh parsley and chilli flakes (optional), finish with the crispy halloumi and chorizo. Serve and enjoy.
