Will it actually be good?
I’ve seen this recipe everywhere lately, and honestly… I was skeptical.
But with a couple small adjustments, this actually came out REALLY solid. The melted chocolate chips help a ton, and adding just a little powdered monk fruit makes the flavor way better while still keeping this low carb and high protein.
If you want more structure and aren’t watching carbs closely, you can add 1-2 tbsp cornstarch.
The best part is this whole thing can come in under 150 calories depending on the chocolate chips you use. Is it bread? NO. Overall? Surprisingly good.
Here’s how I made it:
1.Grab a large mixing bowl and crack in 3 egg whites. Fresher eggs work best here.
2.Whip the egg whites until you get medium peaks, then add 1 tbsp powdered monk fruit and a small squeeze of lemon juice. If you want more structure, this is where you can also add 1-2 tbsp cornstarch.
3.Keep whipping until you get stiff peaks. This part is CRITICAL. Then gently fold in 1/4 to 1/3 cup healthier chocolate chips.
4.Line an oven safe dish or tray with parchment paper. Using a spatula, shape the mixture into a little loaf. Top with more chocolate chips if you want.
5.Pop into the oven at 315F for 35-40 minutes until golden on top. Remove, let sit for a couple minutes to cool
Then rip into it and enjoy!
