Tiramisu Banana Bread

Ingredients

240g 2-3 ripe mashed bananas

80g neutral oil

75g coconut yoghurt

90g coconut sugar

50g unrefined cane sugar (sub white sugar)

190g plain flour

1/2 rounded tsp baking soda

1/2 tsp baking powder

1 tsp vanilla extract

1 1/2 tsp instant coffee powder

coffee soak:

1 1/2 tbsp instant coffee powder

4tbsp hot water

drizzle of maple or agave syrup

frosting:

125ml whippable vegan cream

55g coconut yoghurt

55g vegan cream cheese or mascarpone

1 tsp vanilla extract

3tbso agave syrup or sweetener of choice

cocoa powder to dust

Directions

preheat oven to 175c and line loaf tin with baking paper

mashed the bananas then whisk in the sugars, oil, vanilla, coffee pwdr and yoghurt

then sieve in flour, baking powder, baking soda and fold until just combined

add to tin and bake for 55mins until toothpick inserted comes out clean

meanwhile make the frosting by whipping the cream until just stiff then folding in the rest of the ingredients. add to a piping bag hand refirdgerate to stiffen

whilst cooling, combine your coffee soak ingredients

poke holes all over the banana loaf then soak with the coffee mixture (you might not need it all)

once cooled completely (or overnight) top with the frosting and dust with cocoa powder
