Gut Loving Sweet Potato & Feta Cheese Salad

This is a gut friendly, delicious salad option for you to try. It’s so flavorful and easy to prepare. Enjoy on its own or pair with your favorite protein of choice! Save for later ☝🏼

10g PRO, 51g CHO, 9g FAT

200g of uncooked sweet potato

1/2 tsp each of paprika, chili powder and cinnamon

30g of feta cheese

Spinach

Cucumber

White cabbage

Parsley

Dressing:

30g of low fat natural live yoghurt

1 tsp of Dijon mustard

1 tbsp of apple cider vinegar

Lemon juice

1 tsp of honey

Salt/pepper

Directions

Cut the sweet potato into small cubes. Season with the paprika, chili, cinnamon and salt/pepper. Spray with oil and air fry for approx. 20 mins.

Shred the cabbage, cut the spinach and parsley and grate the cucumber.

Mix all of the dressing ingredients together until smooth.

Add in the spinach, cabbage and cucumber and transfer to a bowl.

Top with the sweet potato, feta cheese and parsley.
