Easy Ground Beef Bulgogi

¼ cup soy sauce
2 tablespoons rice wine vinegar
1 tablespoon brown sugar, (plus 2 teaspoons)
2 teaspoons sesame oil
1 teaspoon fresh ginger, (minced)
1 teaspoon fresh garlic, (minced)
1 pound ground beef
½ small yellow onion, (diced)
1 tablespoon scallion, (diced)
1 teaspoon sesame seeds
4 large soft boiled eggs*
Directions
BULGOGI SAUCE
Make the bulgogi sauce by mixing the soy sauce, rice wine vinegar, brown sugar, sesame oil, ginger, and garlic.
In a medium bowl combine soy sauce, rice wine vinegar, brown sugar, sesame oil, ginger, and garlic. Mix well to combine and set aside.
GROUND BEEF
Cook ground beef and onion over medium heat until browned.
In a skillet over medium heat, add ground beef and onion and cook until browned (about 5 minutes). The meat will still be a little pink.
Add sauce to ground beef and let simmer.
Add the Bulgogi sauce and mix well. Simmer for 6-10 more minutes, and remove from heat.
Distribute ground beef into four bowls and top with scallion, sesame seeds, and a soft boiled egg.
Evenly distribute the mixture between 4 bowls. Top with scallion, sesame seeds, and a soft boiled egg.
Serve over rice.
