Bang Bang Chicken Skewer

Ingredients

2 pounds of boneless, skinless chicken breasts, diced into 1-inch pieces

1 tablespoon extra virgin olive oil

1½ teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon kosher salt

1 teaspoon black pepper

1 cup mayonnaise

⅔ cup Thai sweet chili sauce

1 to 3 tablespoons Sriracha (adjust to taste)

Directions

In a large bowl, combine chicken with olive oil, paprika, garlic powder, salt, and pepper. Toss until evenly coated.

Thread seasoned chicken pieces onto skewers and refrigerate while preparing the sauce.

In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, and Sriracha. Reserve half the sauce for dipping.

Brush remaining sauce generously over the chicken skewers.

Grill Method: Preheat grill to medium-high. Grill each skewer for 6–8 minutes per side, or until internal temperature reaches 165°F.

Air Fryer Method: Air fry skewers at 400°F for 10–12 minutes, flipping halfway.

After cooking, brush with reserved sauce and serve hot.
