Coca-Cola Chicken/Pork Chops

Ingredients

1 cup ketchup

1 cup cola

2 tablespoons brown sugar

8 pork chops or 1 pound chicken thighs

1 tablespoon olive oil

¼ teaspoon salt

¼ teaspoon black pepper

½ small yellow onion diced

1 clove garlic minced

1 tablespoon Worcestershire sauce

½ teaspoon dried oregano

½ teaspoon dry mustard powder

Directions

For Chicken:

Heat olive oil in a large non-stick skillet over medium heat. Season chicken with salt and pepper. Add chicken skin side down and cook just until browned on each side (about 5 minutes). Drain any excess fat.

Combine onions, cola, ketchup, garlic, worcesterchire sauce, brown sugar, oregano, dry mustard powder in a small bowl. Pour over the chicken and bring to a boil. Reduce heat to medium low and cover. Simmer 15 minutes.

Remove lid, and simmer an additional 25 to 30 minutes turning chicken occasionally until chicken is cooked through and has reached 165°F.

For Pork Chops:

Preheat oven to 350 degrees.

Place pork chops in shallow baking dish, sprinkle with salt and pepper.

Mix all ingredients in a bowl; pour over pork chops.

Cover and bake for 1 hour (more or less depending on thickness of chops).

Notes

If you’d like a thicker sauce, once the chicken/pork chops are cooked, remove from the pan and set aside. Throw the sauce into a decent sized saucepan and make a slurry of ⅓ cup water and 2 tablespoons cornstarch. Bring sauce to a boil and while whisking, pour in a bit of the slurry at a time to reach desired consistency (you may not need all of it). Allow to boil 1 minute and toss with chicken or pour on top of pork chops.

Keep leftovers in an airtight container in the refrigerator for 4 days.
