High-protein Tortilla Quiche

Ingredients

1 large whole wheat tortilla

3 large eggs

1/4 cup low fat cottage cheese

1/4 tsp salt

1/4 tsp garlic powder

1/8 tsp cayenne pepper

black pepper, to taste

1/2 cup small chopped veggies of choice, I used zucchini, bell pepper, and red onion but baby spinach is a great no-chop choice

1/3 cup shredded cheese of choice, I used tex mex mix

Directions

Adjust oven rack to the middle and pre-heat to 350 F.

Gently press tortilla into cake pan so it takes the shake of the pan. Set aside.

To a small blender, add eggs, cottage cheese, and seasonings. Blend until smooth, about 15-seconds.

Add blended eggs to tortilla.

Sprinkle vegetables and cheese over top.

Bake for 20-25 minutes or until eggs are set and the tortilla is lightly golden.

Let it cool for 5-minutes before removing from the pan. Slice into quarters and serve. Enjoy!!
