Ingredients

for the cake

400 g sheets filo pastry

4 eggs

180 g sugar

2 oranges, zested

1 orange, juiced

250 g yogurt

250 ml sunflower oil

1 tsp vanilla sugar

2 tsp baking powder

for the syrup

250 g sugar

350 ml water

2 oranges, zested

2 oranges, juiced

1 cinnamon stick

Directions

  1. Pre-heat the oven at 180C.

  2. Boil the syrup ingredients in a pan until the sugar dissolves, about 10 mins.

  3. Wrinkle each phyllo sheet on a baking tray. Let dry in the oven for 60 mins. Cool and crumble in a big bowl.

  4. In another big bowl, beat the eggs with the sugar for 10 mins. Add the rest of the ingredients and mix until smooth. Add the crumbled phyllo and hand mix with a spatula until evenly combined.

  5. Prepare the baking tray with oil and flour. Pour the batter slowly, garnish with thin orange slices and bake at 180C for 40 mins.

  6. While still hot, pour the cooled syrup, one ladle at a time. Let cool before serving.
