WHAT I USED:
1 ¼ lbs beef sirloin steak - i used the @cuisinesolutions brand from Costco (any cut works but macros based on this)
1 shallot
1 bunch parsley
1 bunch cilantro
½ cup chopped roasted red peppers
1 container cherry tomatoes (10 oz)
1 can garbanzo beans
1 can great northern beans
2 ½ queso fresco
2 minced garlic cloves
¼ cup red wine vinegar
¼ cup olive oil
juice of 1 lemon
red pepper flakes
sea salt
