Gluten-free, Refined Sugar-free Version of Ina Garten’s Vira

We all agreed this is one of the best desserts we’ve ever had! And yes, this is a dessert with butter and (unrefined) sugar but it’s made with simple, real food ingredients (zero chemicals, additives etc.) and that’s what’s most important!
2 sticks grass-fed butter (melted and cooled)
2 cups coconut sugar
4 eggs
3/4 cup cocoa powder (unsweetened)
1/2 cup gluten-free flour
1 tbsp vanilla extract
Directions
Preheat the oven to 325F Grease a baking dish and set aside.
Add eggs and coconut sugar to a large bowl and use an electric mixer to beat the eggs for 5-10 min or until color lightens and mixture becomes fluffy
Add cocoa powder and gf flour and mix again (be careful not to overmix!)
Lastly add butter and vanilla and mix until fully combined. Pour into a lightly greased, oven-safe baking dish and smooth out the top. Place the dish into a larger dish filled with water (should be enough water to cover halfway up the brownie dish)
Bake at 325 for about 1 hour or until the brownies are set but soft in the center (longer for more done brownies, less for more of a lava cake)
Serve with ice cream and enjoy!
