Zippy's Chili Copycat

Ingredients

1 Portuguese sausage, finely chopped

1 package (1-pound) of ground turkey (or hamburger)

1 large onion, very finely chopped

3-4 stalks of celery, very finely chopped

1 can (15 ounces) of kidney beans (or black beans in a pinch)

1 can of chili beans (15 ounces). I used the Safeway brand

1 can (15 ounces) diced tomatoes

1 can (15 ounces) tomato sauce

1 cup of chicken broth

2 good squirts of catsup

2 Tbsp red wine vinegar

2-3 bay leaves

2 tsp chili powder

1 tsp brown or raw sugar

½ tsp oregano

½ tsp paprika

½ tsp cumin

1-2 dashes of Worcestershire sauce

2-3 dollops of mayonnaise

Directions

Cook the chopped Portuguese sausage until it is well-browned and starting to get crispy.

Add the ground turkey, smashing up the meat as finely as you can. If it looks a little soup-ey, cook a little longer to let the excess liquid evaporate, but do not let it dry out.

Add onions and celery, and cook until all are soft.

Add kidney beans, chili beans and tomato sauce and all spices EXCEPT mayonnaise.

Simmer for about 30 minutes so the vegetables start to break down a little. Taste at this point and add more Worcestershire or chicken broth to taste.

Remove bay leaves

Just before serving, start to stir in mayonnaise.
