Ingredients

-shitake mushrooms

-scallions

- 1 pack of firm tofu

- 6 - 8 cups (2 boxes) chicken broth

- 1 can bamboo shoots

- 3 tbsp Soy Sauce

- 1/2 tsp crushed red pepper

- 1/4 tsp white pepper

- 1/2 tsp sugar

- 4-6 eggs

- 2 tbsp cornstarch with 3 tbsp water

- 2 tbsp white or rice vinegar

- 1 tsp sesame oil

Directions

Slice mushrooms lengthwise

Cut tofu into blocks

Put tofu, bamboo shoots, mushrooms and broth into pot and begin heating. Add soy sauce, spices and sugar

Whisk cornstarch and water, add slowly

Bring to simmer. Whisk eggs, then add slowly while stirring.

Finish with vinegar, sesame oil, and salt.

Optional: dice chives and put over the top, serve
