Pigs in Blankets Alfredo

8 pigs in blankets
120g dry linguine
40g diced bacon
10g light butter
Tsp chopped garlic
100ml reduced fat single cream alternative (or half single cream half semi skimmed milk)
Tsp Italian herb seasoning
Salt
Pepper
15g grated parmesan
A couple of sprigs of fresh parsley chopped
Directions
Start by cooking the pigs in blankets according to packet instructions.
Next, bring the pasta to boil in a large pan of salted water.
Whilst the pasta cooks, add the bacon to a frying pan. Cook for a few minutes until crispy and remove from the pan leaving the fat behind.
Add in the butter, garlic, cream, Italian herb seasoning along with salt and pepper. Leave over medium heat for a couple of minutes to thicken, then grate in half of the parmesan.
Once the pasta is cooked, drain reserving 50-100ml pasta water. Add the cooked pasta to the sauce and loosen with the pasta water, I usually start less and see if it needs more.
Serve with the crispy bacon on top along with the cooked pigs in blankets, fresh parsley and remaining parmesan.
