Cheeseburger Impossible Pie

1 lb ground beef
1 medium onion, diced
6 slices bacon (optional)
1/4 cup (68g) ketchup
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz) (can substitute with American cheese slices)
1/2 cup (60g) Bisquick mix (or 1/2 c flour, 3/4 tsp baking powder, pinch of salt)
1 cup milk
2 eggs
Additional ketchup, for serving
Directions
If using bacon: line a sheet tray with aluminum foil and lay out each slice of bacon so they are not touching. Do not preheat oven, put bacon in and turn to 425°F. Cook for about 15 minutes, checking on the bacon often (no need to flip it), until the strips are crispy. Cooking time depends largely on how quickly your oven heats up and how thick your bacon is. Remove from oven and transfer strips to a paper towel-lined plate. Let them cool slightly, then roughly chop.
Heat oven to 400°F. Spray 9-inch pie dish (or small casserole dish) with cooking spray.
In a large skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain if necessary. Stir in salt. Spread evenly in pie plate. Sprinkle with cheese.
In a bowl, whisk eggs, milk, bisquick, salt, pepper, and ketchup. Pour over meat and cheese in pie dish.
Bake about 25 minutes or until a knife inserted into the center comes out clean.
