1000g 00 flour
600ml water
7g yeast
25g salt
Directions
Mix 250 g 00 flour with 450ml water and alll the yeast. Let sour for a couple of hours to overnight.
Then knead in 750 g flour and 150ml water plus all the salt. Continue to knead for ten minutes
Ball the dough and let rest for 30, then knead some more and rest again before repeating one more time. After the third kneading, the dough should be allowed to rest as long as possible, at least until it has doubled in size.
At this point, divide into 3-4 portions for a half and 6-8 for a full and re ball, allowing to rise again until doubled in size. At this point you can stretch the balls into pizzas
