Zucchini Casserole

Ingredients

IT'S ZUCCHINI SEASON. IF YOU HAVEN'T TRIED MY ZUCCHINI CASSEROLE RECIPE, YOU REALLY SHOULD. That's all.

4 to 5 cups chopped zucchini (1/2 inch or so pieces) par boiled for 3 minutes in salted boiling water then drain and cool slightly.

4 eggs

1 1/2 cups Mayo

Or 1 cup Mayo and 1 and a half cups cottage cheese)

1 to 2 tsp. Garlic powder or freshly grated garlic

2 cups cheddar or pepper jack or mixture of both

3 to 4 fresh Anaheim or Hatch chili's diced

I have been using bell pepoers lately

1 C frozen corn

3 small sleeves Ritz Crackers crushed

2 tbs. Butter

Black pepper

Salt to taste **cheese is salty and Crackers are too

Slightly beat the eggs then add the mayonnaise and mix well. Add all other ingredients except Ritz and butter.

Spread into 9×13 buttered dish

Top with Ritz Crackers mixed with melted butter.

Directions

Bake at 350° for 45 minutes.
