Cowboy Pie

Ingredients

1-2 lb lean ground beef

2 cups frozen peas and carrots

1 diced onion

1 diced bell pepper

1 cup corn (frozen or can)

8 ounces tomato sauce

2 tbsp taco seasoning

1 tbsp Worcestershire sauce

1 cup shredded mexican cheese

Cornbread topping

8.5 ounce box Jiffy corn bread mix

1 large egg

1/3 cup milk

1/4 cup diced green chiles

Directions

Preheat oven for 350 degrees

Cook ground beef in a pan and strain grease.

Return to medium heat and add tomato sauce, taco seasoning, Worcestershire sauce, and veggies. Cook until tender and no longer frozen (5 minutes).

Spray a 9x9 pan and evenly distribute the mixture into the pan. Sprinkle cheese over everything.

In a small bowl, combine the muffin mix, egg, milk, and green chiles. Pour mix over meat.

Bake for 25-30 minutes or until the cornbread starts to turn golden brown.
