Psa: Stuff Your Chops

2 cups toasted fresh breadcrumbs
2 tablespoons unsalted butter
4 scallions (white and light green parts), finely chopped
1 clove garlic, crushed and finely grated
¼ cup chopped parsley
1 tablespoon chopped fresh thyme or rosemary
Salt and pepper
½ cup chicken broth
⅓ cup shredded Monterey jack cheese
1/4 cup grated Parmesan cheese
1/4 center-cut bone-in pork chops (1 to 1 ½ inches thick; 10 to 12 ounces each)
Sweet Preacher pork rub (Now at Sam’s Club, Walmart and Kroger)
THE METHOD:
Toast fresh breadcrumbs. We used day-old sourdough, blended.
Directions
In a skillet over medium heat, melt butter and drop in breadcrumbs, scallions, garlic, parsley, herbs and a bit of salt and pepper.
Stir around to incorporate and lightly cook ingredients for a few minutes. Add broth and stir.
Transfer mixture to a large mixing bowl and a slow to cool for a few minutes. Stir in both cheeses.
With a thin knife, cut a large, deep pocket into the chop. Fill the pocket with stuffing.
Season entire chop with Sweet Preacher.
You can bake, air fry or grill the stuffed chops at 350°F. You can also smoke them.
Chops are done when meat is at least 145°F and the deepest part of the stuffing is at least 130°F.
Slice and eat!
