Instantpot Lemon Chicken Orzo Soup

Ingredients

1 tablespoon olive oil

1 yellow onion, diced

3 cloves garlic, minced

3 carrots, chopped

3 celery, chopped

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon thyme

3 cups chicken bone broth

1/2 lb chicken breast

1 bay leaf

1/3 cup uncooked orzo

2 tablespoons fresh lemon juice, more for serving

Directions

turn instantpot onto sauté mode. add in oil, onions and garlic to cook until softened, about 2 minutes.

add in carrots, celery, sea salt, pepper, thyme, broth, chicken and bay leaf. close lid, set instantpot to high pressure for 6 minutes and make sure lid with vent is in sealing position.

when the instantpot beeps, allow pressure to release by switching to venting. allow to release for 10 minutes, then open the lid!

remove bay leaf to throw away and then remove chicken breasts and shred. add shredded chicken back into pot along with orzo. set instant pot to sauté mode for 6 minutes or until orzo is cooked. when done, turn off instant pot and stir in fresh lemon juice. serve warm!
