Ingredients

1 lb cooked extra lean ground beef

1 package (7.5 oz) Pillsbury biscuits (10 biscuits)

1 package (30g) taco seasoning

1 1/3 cup salsa

2 cups diced peppers (red, orange, yellow)

1 cup diced red onion

1 cup reduced-fat shredded cheese (3 cheese blend)

Green onion, chopped

Fat-free sour cream for topping (optional)

Directions

Begin by cooking the extra lean ground beef in a pan on the stove. Once cooked, add the taco seasoning and simmer for a few minutes to infuse the flavors.

Preheat your oven to 350°F and spray a 9×13 casserole dish with cooking spray. Set aside.

In a bowl, mix together the cooked ground beef and salsa until well combined.

Dice the peppers and onion, and then cut the biscuits into 6 pieces each.

Arrange half of the biscuit pieces in the bottom of the prepared casserole dish. Top with half of the meat mixture, half of the diced peppers and onions, and half of the shredded cheese. Repeat the layers and finish with chopped green onion on top.

Loosely cover the casserole dish with foil and bake in the preheated oven for 35 minutes. Remove the foil and continue baking for an additional 15 minutes until bubbly and golden.

Let the casserole cool for 5 minutes before cutting into 6 servings. Optionally, top each serving with a spoonful of fat-free sour cream.
