Golden Crispy Chicken Delight

Chicken Preparation:
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (preferably panko)
1/2 cup grated Parmesan cheese
Salt and pepper
Vegetable oil for frying
Mushroom Sauce:
2 tablespoons unsalted butter
1/2 cup sliced mushrooms
1 small garlic clove, minced
1/2 cup heavy cream
1/4 cup chicken broth
1/4 cup grated Parmesan cheese
Salt and pepper
Fresh parsley, chopped, for garnish
Directions
Lightly season the chicken breasts with salt and pepper. Coat each one in flour, dip into the beaten eggs, and then press into a blend of breadcrumbs and Parmesan cheese until fully covered.
Warm the vegetable oil in a large skillet over medium heat. Fry the chicken for about 4–5 minutes per side, or until crisp, golden, and cooked through. Set them on a plate lined with paper towels to drain any extra oil.
Using the same pan, melt the butter over medium heat. Toss in the mushrooms and minced garlic, cooking for around 5 minutes until tender and fragrant. Stir in the heavy cream, chicken broth, and Parmesan cheese. Let it gently simmer for 3–4 minutes, stirring occasionally, until the sauce becomes smooth and thick. Adjust seasoning with more salt and pepper as needed.
Spoon the creamy Parmesan mushroom sauce over the crispy chicken breasts. Sprinkle with chopped parsley and serve right away for a restaurant-quality finish. | Stir of Comfort
