2 leeks
1 shallot, diced
4 cloves of garlic, minced
1 heaped tsp. White miso
700g butterbeans
1 bay leaf
1 heaped tbsp. Nutritional yeast
1 tbsp fresh chopped chives
Directions
Slice the leeks into 2-3cm rounds and fry in butter for 3-5 minutes per side and then remove and fry the shallots in the same pan for 5 minutes before adding the garlic for another minute. Chuck in the bay leaf and the beans, including their soaking liquid, followed by some nutritional yeast. In a separate bowl, mix miso with some hot water and then add that in too. Season to taste and the let simmer for 5 minutes before serving."
