Roasted Beets with Lemon-tahini Dressing – a Tangy Twist on

Ingredients

4 medium beets, peeled and cut into wedges

2 tbsp olive oil

Salt and pepper to taste

1/4 cup tahini

2 tbsp fresh lemon juice

1 tbsp maple syrup or honey

1 garlic clove, minced

2-3 tbsp water (to thin dressing)

Fresh parsley for garnish

Directions

Preheat oven to 400°F (200°C). Toss beet wedges with olive oil, salt, and pepper.

Spread beets on a baking sheet and roast for 35-40 minutes, turning halfway, until tender and caramelized.

In a small bowl, whisk together tahini, lemon juice, maple syrup, garlic, and water until smooth and creamy. Adjust water to desired consistency.

Drizzle dressing over roasted beets and garnish with fresh parsley before serving.
