Crispy Chicken Schnitzel Caesar in a Roasted Garlic Bread Bu

Ingredients

for four sandwiches

4 Portuguese buns

2 heads of garlic

2 chicken breasts, halved & flattened (4 cutlets)

1 cup panko bread crumbs

6 tbsp @toom garlic dip

1 stick of unsalted butter (½ cup)

2 tbsp fresh parsley, chopped

1 heart of romaine lettuce, chopped (or pre-cut)

1 cup all-purpose flour

2 eggs

Olive oil, for roasting garlic

Neutral oil for pan-frying (I used avocado)

Salt & pepper, to taste

Around 1 cup of parmesan cheese, grated

For the authentic caesar dressing, you can use store-bought if you are boring/lazy (homemade is unmatched though): 3 minced garlic cloves, 1 tsp seasoning salt, 2 tsp black pepper, 1 tsp worcestershire sauce, ½ tsp tabasco, 1 egg yolk, ½ tsp dijon mustard, 1 tbsp red wine vinegar, ½ lemon juiced, 4 tbsp extra virgin olive oil, ½ cup parmesan cheese.

Directions

Preheat oven to 400°F (205°C)

Slice the top (about ¼) off the garlic heads, pour a splash of olive oil onto each, add a pinch of salt and wrap in tinfoil. Place in the oven for around 45 minutes.

Prepare three bowls/trays for breading the cutlets: (1) Flour mixed with salt & pepper, (2) beaten eggs whisked with 2 tbsp @TOOM, (3) Panko breadcrumbs.. One by one, toss the cutlets in the flour, then drench in the egg wash, then finally toss in the bread crumbs.

In a large pan over medium heat, coat with a neutral oil of choice (I used avocado). Once hot, fry the cutlets for around 4 minutes on each side until perfectly golden brown and cooked through. Remove the cutlets from the pan and place on a wire rack or plate lined with paper towel.

Make the caesar dressing. Combine the minced garlic with seasoning salt and pepper, form into a paste with a spoon. Add the worcestershire sauce, dijon, egg yolk and tabasco, whisk well to combine. Add the fresh lemon juice and red wine vinegar, stir to combine. Finally, slowly add the olive oil while whisking vigorously for 1-2 minutes to fully emulsify the dressing.

Now, the roasted garlic should be done, remove and turn the oven down to 350°F (175°C)

Squeeze out the garlic cloves and combine with butter, fresh parsley, salt & pepper. Evenly spread the garlic butter onto the open-faced portuguese buns. As well, top off with a hefty shaving of parmesan cheese onto each bun. Bake in the oven for around 10 minutes or until toasted to your preference.

Assemble the sandwiches: spread 1 tbsp of @toom onto each bun, add a chicken cutlet, then a generous handful of the tossed caesar salad. Finish with an extra snowfall of parmesan (because more cheese is always the right move), then serve immediately and enjoy!
