Shrimp-crab Fajita Roll-up Bombs

Ingredients

1 lb shrimp, peeled & deveined

½ cup crab meat (lump or imitation)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

½ small red onion, sliced

2 tsp fajita seasoning

1 tbsp olive oil

4 large flour tortillas

1½ cups shredded mozzarella or Mexican cheese blend

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)

Directions

Preheat oven to 375°F (190°C).

In a skillet, heat olive oil over medium-high. Add shrimp, crab, bell peppers, and onions. Sprinkle with fajita seasoning, salt, and pepper. Sauté 4–5 minutes until shrimp is pink and veggies are tender.

Divide mixture onto tortillas, roll tightly, and place seam-side down in a greased baking dish.

Sprinkle cheese generously over the top.

Bake for 10–15 minutes or until cheese is bubbly and golden.

Garnish with parsley and serve warm.
