Cheesy Potato Burritos

1 pound ground beef
2 tablespoons taco seasoning
4 large flour tortillas (Burrito size)
1 ½ cups shredded cheddar cheese
1 cup nacho cheese sauce (Plus extra for dipping)
1/2 cup sour cream
salt and pepper (To taste)
Directions
Bake
Preheat oven to 425°F and spread frozen tater tots in a single layer on a baking sheet. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through for even browning.
Cook
While tater tots bake, brown ground beef in a large skillet over medium-high heat until no pink remains. Drain excess grease, then add taco seasoning and a splash of water, stirring until evenly coated.
Warm
Heat flour tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable, or wrap in damp paper towels and microwave for 20 seconds.
Assemble
Lay warm tortilla flat and spread nacho cheese sauce down the center. Add seasoned ground beef, crispy tater tots, shredded cheddar cheese, and a dollop of sour cream. Keep fillings centered with 2 inches space on sides.
Wrap
Fold sides in toward center, then fold bottom up over fillings and roll tightly away from you, tucking as you go. Cut in half diagonally and serve immediately with extra nacho cheese sauce for dipping.
