Honey Bbq Steak & Rice

Ingredients

1 lb sirloin steak, cut into bite-size cubes

1 tbsp olive oil

1 small onion, diced

1 red bell pepper, diced

3 cloves garlic, minced

1 cup long-grain white rice (uncooked)

2 cups beef broth

½ cup BBQ sauce

2 tbsp honey

½ tsp paprika

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper

½ cup shredded cheddar cheese (optional)

2 tbsp chopped green onions (optional)

Directions

Heat olive oil in a large 12-inch skillet with a lid over medium-high heat.

Season steak with salt, pepper, paprika, and garlic powder. Add to skillet and sear 2–3 minutes per side until browned. Remove and set aside.

In the same skillet, add onion and bell pepper. Cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.

Add uncooked rice and stir for 1 minute to lightly toast.

Pour in beef broth, BBQ sauce, and honey. Stir well.

Return steak to the skillet and bring mixture to a gentle boil.

Reduce heat to low, cover, and simmer 18–20 minutes until rice is tender and liquid is absorbed.

Remove from heat and let sit covered for 5 minutes.

Sprinkle cheddar cheese on top if desired and cover for 2–3 minutes until melted. Garnish with green onions and serve warm.
