Ingredients

500–600g potato* (peeled, chopped, steamed)

100g suan cai (pickled mustard greens, chopped)

60g suan cai liquid

3 garlic cloves (minced)

5 dried chilies (chopped)

1 spring onion (chopped)

Small bunch of fresh fennel (or fennel fronds)

1 tsp Sichuan peppercorn powder (or white pepper)

2–3 tsp soy sauce (adjust to your taste)

Notes:

If you don’t have a steamer, you can also boil potato WITHOUT pealing until tender
