Ingredients

2 cups semisweet chocolate chips

1 cup coconut milk

Cocoa powder

Directions

Heat coconut milk in a saucepan over medium high heat until simmering (not boiling) and pour over chocolate chips. Stir until smooth and evenly incorporated, then refrigerate until mixture is firm. Use a cookie scooper to make truffle-sized pieces, then toss in cocoa powder to coat.
