Mexican Shredded Beef Barbacoa

Ingredients

1 1/2 tsp chipotle powder (adjust spiciness to taste (Note 5)

1 packet taco seasoning (Siete mild)

1 - 2 tbsp butter

2-3lb beef chuck or brisket (or gravy or any other slow cooking beef)

4 cubes frozen garlic

1 onion, sliced pole-to-pole (yellow, brown or white)

1 cup orange juice

2 tbsp lime juice

2 tbsp tomato paste

1 tsp beef base (Better than Bullion)

1 cup beef or chicken broth/stock

Salt and pepper

Directions

Cut the beef into 1.5in strips. Heat pan on high and sear 4 long sides of each strip until well-browned.

In instant pot, turn pot to saute on level 4, allow to preheat and melt butter. Add sliced onion and cook for ~5 min until starting to turn translucent. Add tomato paste and garlic and cook for ~1 min until fragrant and dark red. Add taco seasoning mix and chipotle pepper and cook for ~30 seconds, stirring well.

Add the orange juice and lime juice, and scrape the bottom of the pot so the brown bits mix into the liquid. Add chicken stock and beef base, mix well.

Cut the beef strips into 2in sections, add to instant pot and stir to coat beef with seasoning mixture.

Put the lid on and set instant pot to pressure coof “Beef” for 60min.

Once cooking is complete, allow pot to slow-release for 10 min, then use quick-release to release the remaining pressure and remove the lid.

Remove the beef from the sauce.

Set the instant pot to Saute, level 2 or 3 with the lid off for 10 to 15 minutes to reduce and thicken the sauce to your taste.

While the sauce is reducing, shred the beef with 2 forks, remove any excess connective tissue.

Toss beef back into the sauce (can reserve some Sauce for drizzling on tacos if you want, there's plenty).

Transfer beef into large dish and serve. See notes for suggestions.

Tacos

To make tacos, serve the beef with warmed small tortillas, avocado slices, Pico de Gallo, shredded cheese, sour cream, lime wedges and extra cilantro/coriander leaves.
