Honey Lime Grilled Chicken Tacos with Cabbage Slaw

1 lb boneless, skinless chicken breasts
2 tablespoons honey
2 tablespoons lime juice
1 teaspoon olive oil
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
1 cup shredded cabbage
1/4 cup chopped cilantro
1/4 cup diced red onion
1 tablespoon lime juice
1 tablespoon apple cider vinegar
8 small flour tortillas (or corn, if preferred)
Directions
In a small bowl, mix honey, lime juice, olive oil, garlic powder, cumin, chili powder, salt, and pepper. Pour over chicken breasts, and let marinate for at least 30 minutes.
Preheat grill to medium heat. Grill chicken for 6-8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
While chicken is grilling, prepare the slaw by combining shredded cabbage, cilantro, red onion, lime juice, and apple cider vinegar in a bowl. Toss until well combined and set aside.
Once the chicken is cooked, slice it into thin strips.
Warm the tortillas on the grill for about 1 minute, until soft and slightly charred.
Assemble tacos by placing slices of grilled chicken onto each tortilla and topping with the cabbage slaw.
