Dijon Vinaigrette yield: 3 quarts
2 cups red wine vinegar
2 cups shallots, finely diced
3 tsp. salt
¾ cup dijon mustard
1 tsp. fresh ground black pepper
½ cup fresh basil, finely chopped
½ cup parsley, finely chopped
8 cups olive oil
1. Combine first seven ingredients.
2. Whisk in olive oil until thickened.
