Ingredients

¼ cup oil

½ cup sugar

1 egg

1/3 cup plain yogourt or light sour cream

½ tsp vanilla

¾ cup all purpose flour

½ tsp baking powder

¼ tsp baking soda

Dash of salt

Icing

3 oz light cream cheese

½ cup icing sugar

½ tsp vanilla

1/3 cup sprinkles of your choice

Directions

In a bowl add oil, sugar, egg and mix well.

2.Add yogurt , vanilla, flour, baking powder, baking soda and salt.

2.Mix until flour is incorporated.

Spray 12 mini muffin cups with oil and fill with batter.

4.Bake at 350 F for about 10 minutes or just until tester comes out just dry.

Meanwhile, for icing purée light cream cheese, icing sugar and vanilla until smooth.

When muffins are cool dip into icing then into the sprinkles. Enjoy!
