4 boneless skinless chicken breasts
2 tablespoons of the olive oil
1 teaspoon of Italian seasoning

4 roma tomatoes, diced
2 minced garlic cloves
1/4 cup red onion, finely chopped
1/4 cup fresh basil, chopped
1 tablespoon of balsamic vinegar
1/2 cup grated mozzarella cheese (optional)

Preheat the oven to 400 ° F (200 ° C). Season chicken breasts with olive oil, Italian seasoning, salt and pepper.
Place the chicken in a baking dish and bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
While the chicken is baking, prepare the bruschetta filling: In a bowl, combine tomatoes, garlic, red onion, basil and balsamic vinegar. Toss to mix well.
Once the chicken is done, top each breast with a spoonful of bruschetta mix and grated mozzarella (if using). Bake for 5 minutes or until cheese is melted.
Drizzle with balsamic glaze and serve warm with a side salad or pasta.
