1/2 cup flour
1/2 t. Salt
2 eggs, well beaten
2/3 cup milk
1 T. melted shortening
Sift flour; add salt and sift again.
Combine beaten egg, milk and melted shortening; add flour mixture and beat until smooth.
Using a small, shallow fry pan, pour enough batter to make one thin pancake about 4-5 inches in diameter. Tip the pan to swirl the batter and make the pancake universally thin. Fry about one minute per side on medium to high heat. Keep hot until all blintzes are done.
Fill with desired filling.
