Coffee Baked Oatmeal

Ingredients

2 cups rolled oats (use gluten-free as needed)

1 teaspoon baking powder

1/4 teaspoon salt

2 Stevia packets (or other desired sweetener- 1/4 brown or coconut sugar would also work well)

1 egg or 2 egg whites

1 cup strong brewed coffee

1 cup cashew milk

1 teaspoon vanilla extract

optional add-ins; 1/2 cup chopped cashews

(Ratio 2 1/4 cup liquid to 2 cup solid)

Directions

Preheat oven to 375 degrees F (Gas mark 5) and prepare an 8x8 baking dish or 9-inch pie plate with cooking spray.

Combine all dry ingredients in a medium to large bowl. Stir in all wet ingredients and any optional add-ins. Transfer to baking dish and bake for about 25 minutes.

Enjoy with any additional toppings you prefer. I love to mash my baked oatmeal in a bowl with additional Cashewmilk and Stevia and add fresh fruit and a drizzle of peanut or almond butter. Yum!

Notes

15/10/2023 - Result: OK but not great. Sticky and underbaked. Slightly too sweet but could be the Truvia or the vanilla or the dates. Walnuts and almonds were lovely and crunchy. Substitutions: Added 1/4 cup chopped dates, 1 tsp cinnamon, 1/2 chopped walnuts, 1 tbsp sliced almonds (a pain to chop). Used 1/4 cup natural yoghurt, 1/4 cup coffee mix (w 1/2 tbsp decaf instant) and 1/2 cup milk in place of coffee and milk, which clearly caused “stickiness”. Used 4 tsp Truvia for the 2 packets Stevia. Next time: if using yoghurt, definitely bake for 40min as in the yoghurt recipe, not 25min as here, or just don’t use that. Use less coffee (1 tsp) for a more subtle taste and use coffee milk in other baked oatmeals. Try making without truvia and only dates and vanilla!
