A Lovely Lemon Dish for This Saturday Evening

Ingredients

2 chicken breasts, sliced thin

2 eggs

1 cup breadcrumbs

pasta of choice

1 cup heavy cream

2 cloves garlic, minced

2 tbsp butter

olive oil

1/2 a lemon

Fresh parsley, chopped

fresh parmesan

onion powder, garlic powder, Italian seasoning

Salt and pepper, to taste

Directions

Slice and pound chicken into 4 thin pieces. Season with salt and pepper. Dip each chicken breast slice into the beaten egg, then coat in breadcrumbs.

Cook the pasta according to package instructions.

While pasta is cooking, in a large skillet, heat up olive oil. Add the breaded chicken slices and cook for 4-5 minutes on each side, until golden and cooked through. Remove and set aside.

In the same skillet, add oil, butter & minced garlic and cook for 1-2 minutes until fragrant. Pour in the heavy cream and lemon juice. Simmer for 3-4 minutes, stirring occasionally. Add in some fresh parm.

Add the cooked pasta to the skillet with the sauce. Toss to coat.

Slice the chicken and arrange it on top of the pasta. Garnish with fresh parsley and lemon.
