Basic Pesto

1.25 cups fresh basil leaves (no stems)
2 tablespoons pine nuts (or walnuts)
2 small cloves garlic
2-3 T good EVOO (Graza Drizzle)
3 T freshly grated Parmesan
Directions
Combine basil leaves, pine nuts (or walnuts) and garlic in a food processor and process until very finely minced.
Place the pine nuts and garlic in the bowl of a food processor fitted with a steel blade. Process for 15 seconds. Add the basil leaves. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is smooth. Add the Parmesan and process very briefly, just long enough to combine. Taste for saltiness and add Kosher salt as needed. Use right away or store the pesto in the refrigerator or freezer.
