Black Bean Ranch Chicken

Ingredients

(I usually replace the sauce with creamy jalapeno)

¼ cup fat-free mayonnaise

¼ cup low-fat sour cream

¼ cup cilantro, chopped

1 tsp grated lime zest (peel)

1 lime, halved

½ tsp ground cumin

¼ tsp ground red pepper

4 portions cooked chicken breast (about 1 lb), cut into bite-size pieces

1 can (15 oz) black beans, drained and rinsed

1 can (11 oz) whole-kernel corn, drained

1 red bell pepper, diced

½ red onion, chopped

Directions

1) In a large mixing bowl, combine mayonnaise, sour cream, cilantro, lime zest, lime juice, cumin and ground red pepper Or use creamy jalapeno.

2) Combine all other ingredients together in a bowl (if using creamy jalapeno instead also add lime, cilantro, cumin, and ground red pepper to the chicken and vegetables).

3) Serve in a pita bread
