Bang Bang Chicken Skewers

Ingredients

450g chicken breasts or thighs, cut into 1″ cubes

200 ml mayonnaise

2 Tbsp sweet chili sauce

1 Tbsp sriracha or chilli sauce

1/2 Tsp Tandoori Masala

1 Tbsp honey

2 garlic cloves grated

1 tsp fresh grated ginger

Coriander

Wooden or metal skewers

Directions

In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, garlic, and ginger until smooth.

Thread chicken cubes onto skewers, placing 4–5 pieces per skewer.

Preheat grill to medium-high. Brush each skewer with sauce mixture.

Grill skewers 3–4 minutes per side until chicken is cooked through and edges are slightly charred.

Brush remaining sauce one more time during the last minute of cooking for glaze.

Remove from heat. Garnish with finely chopped coriander before serving.
