Ingredients

Ground turkey

1 ½ lbs ground turkey

1 tsp cumin

1 tsp paprika

2 tbsp olive oil

Salt and pepper to taste

Cucumber/tomato salad

2 cucumbers, diced

2 cups cherry tomatoes, halved

Red onions (optional)

Olive oil

Lime juice

Feta

Salt and pepper

3 cups cooked rice or cauliflower rice

1/2 cup hummus

1/2 cup tzatziki

Directions

Heat olive oil in a skillet. Cook ground turkey with cumin, paprika, salt, and pepper until browned.

Assemble cucumber/tomato salad: Combine tomatoes, cucumbers, olive oil, lime, feta, and sald and pepper to taste.

Assemble bowls: Add rice as a base, then top with turkey, cucumber/tomato salad, hummus, and tzatziki.
