Seafood Bisque

Ingredients

1 can tomato soup

1 can cheddar cheese soup

milk - 7/8 can per each soup can

1 pound large cooked shrimp, (frozen is ok)

3 tablespoons olive oil

1/2 teaspoon oregano 1/2 teaspoon sweet basil

1/2 teaspoon chili powder 1/2 lemon

1 medium onion

1 tablespoon sherry

4 spears garlic

Directions

Prepare shrimp by washing with cold water and cut in half.

Using 2 quart sauce pan, add olive oil, oregano, sweet basil, chili powder, chopped onion and grate garlic spears.

Place on high heat and cook until onions start to blanch.

Add soups and milk, stir until smooth. (takes about 1/2 hour to make smooth) Add lemon while stirring.

Stir in cooking sherry.

Add shrimp last so they do not overcook. (Can add other seafood for Seafood Bisque)

* Can use half & half, or cream instead of milk to make thicker.

Would be good over pasta too!
