Veggie Chili

Ingredients

  • 1 red onion (chopped)

  • 1 red bell pepper (chopped)

  • 2 carrots

  • 2 celery ribs

  • 4 garlic cloves

  • 1 zucchini

  • 28oz canned diced tomatoes

  • 2 tablespoons chili powder

  • 2 teaspoons cumin

  • 1 1/2 teaspoons paprika

  • 1 can black beans

  • 2 cans red kidney beans

  • 1 can light red kidney beans

  • 2 cups veggie broth

  • Mexican cheese

  • Sour cream

  • Avacado

Directions

  1. Cook onion, bell pepper, carrots, celery, salt, pepper, and olive oil in chili bowl on medium temp

  2. Add garlic after a few minutes

  3. Add spices (chili powder, cumin, and paprika)

  4. Add beans (without juice), diced tomatoes (with juice), broth, and zucchini

  5. Cook at a simmer/low boil for 45 minutes

  6. Top with Mexican cheese, sour cream, and avacado
