6-8 lasagna noodles, broken into bite-sized pieces
15 ounces ricotta cheese
½ cup grated Parmesan cheese, plus extra for serving
¼ cup chopped fresh parsley, plus extra for garnish
1 large egg
½ teaspoon salt
¼ teaspoon black pepper
1 ½ cups shredded mozzarella cheese
