Amish Sausage Gravy Recipe

1 - 2 pounds ground sausage
3 - 4 tablespoons butter
1 cup (heaping full) all-purpose flour
4 1/2 - 5 1/2 cups milk, depending on how thick you like it
1 teaspoon garlic powder
3/4 teaspoon Tony's Creole seasoning or seasoned salt
3/4 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon ground sage
salt to taste
Directions
Brown the sausage in a large pot.
Add slices of butter and allow it to melt.
Sprinkle the flour over the top of the sausage and butter. Over medium/low heat stir the flour/sausage mixture for several minutes.
While whisking, slowly pour 2 cups of the milk into the pot. Mix until creamy.
Add the remaining 2 1/2 cups of milk and seasonings, and bring it to a low boil. Allow the gravy to simmer for a minute until thickened, stirring occasionally so it won't burn. Add milk as needed to get the desired consistency.
Serve immediately over your favorite biscuits.
Cool and refrigerate any leftovers in an airtight container. Reheat and enjoy!

Suggestions: Try replacing some or all of the milk with half & half
